The reason is proportion. A rectangle twice as long as it is wide gives a vein room to travel; on a small square or hexagon the same vein is cut into fragments and the movement is lost. Across a sheet of brick-bond Calacatta the gold reads as continuous drift, which is what people are buying the stone for in the first place.

Honing rather than polishing keeps that drift readable without gloss. A polished Calacatta throws highlights that break the vein up and, in a confined space such as a splashback or a shower return, tends to look busier than the sample suggested. A flat matte face lets the figure do the work on its own.

Two practical notes. The gold veining is softer than the white ground, so on a floor in constant use it wears very slightly faster and can develop a shallow relief over years; on a wall this never arises. And Calacatta is a calcitic marble, so acids etch it, leaving a dull patch that sealing cannot prevent. A splashback behind a hob is the one location worth thinking about twice.
